        <item>Cheddar, Emmenthal, or Gruyere cheese, grated</item>

    <directions>
      <step>Preheat oven to 425 degrees and lightly grease a baking sheet.</step>
      <step>Combine water, butter and salt in medium saucepan and bring to bubbles over medium-high heat</step>
      <step>Continue cooking, stirring, until butter melts</step>
      <step>Add flour all at once and cook, stirring constantly, until the dough holds together in a ball, 1 to 5 minutes</step>
      <step>Remove from heat</step>
      <step>Add eggs, one at a time, beating hard after each addition</step>
      <step>Stir in the cheeses; if you would like you could substitute diced sauteed mushrooms; minced cooked shrimp or crab; minced artichoke hearts; grated zucchini; or another filling, for the first cheese</step>
      <step>Drop by teaspoonfuls onto the baking sheet and bake until golden brown, 10 to 15 minutes</step>
